Whilst driving along a well known bi-way today I went through the usual standing water that is on it, only to find it deeper than usual and promptly stopped right in the middle at about 3.5 foot in depth. After a lovely journey to fetch a local yacker with a tractor to pull it out I attempted to start her up, but to no avail there was also oil and water ****ing out of the sump. advice please?

Did it stall due to hitting the water or did it cut out due to water ingestion? You did remove the plugs and turn the engine over by hand to expel the water from the cylinders prior to trying to start the vehicle I take it?
 
Remove the air filter. Disconnect the turbo-intercooler pipe and drain any water out that might have found its way in here. Remove the glowplugs, disconnect the fuel stop solenoid and turn the engine over on the starter for about 30 secs or so. Then refit the glowplugs and try again. If it doesn't turn on the starter motor with the glowplugs out, then you've done internal damage like bent a rod or crank etc.
 
Speaking from experience, what tends to happen is the filter gets soaked with silt/water and strangles the engine causing it to stall, before enough water is ingested into the cylinders to acutally hydraulic it. So, you might be lucky....fingers x'd.
