I have fitted a few of the overhead screens in Disco 2's pretty straight forward, I would imagine the in head rest jobs would be a different story.

I have got OVERHEAD CONSOLE KIT COMPLETE STC61971AA which would have been factory or dealer fit for my discovery 2

Factory, as it was an option in the sales brochure and not a dealer fit accessory.

Dealers didn't fit options as they were part of your order spec for your vehicle, but if u say so I wouldn't have an issue in that, or do you mean that dealer would fit one for you if you if you had puchased one elsewhere which they may well do just like they would for the fitting of driving lamps, tow bar etc. which are accessories.
Do you have sales brochure with the options when you purchased your disco ?.
