I have put a 300 in my fender and on idle I can hear a deep tap noise? It doesn't affect anything that I am aware of but keen to know what it is?

i would check rockers and valve caps , even had push rod wera throug follower, or vac pump

Saying that while replacing gaskets before fitting I found a broken lifter (the ball that the rocker sits on and screws in the head) but looks old as they were all there! Looks like a old repare but left a broken one cloying around!!

Have got a replacement head from blown engine but didn't want to swap and change as it run but looks like I am gonna have to

shouldnt involve removing head unless follower issue

I will try adjusting the gap on the tappets first, if still there will swap the rockers over

i would remove vac pump after tapets and just try it will loose some oil but dont need to run for long to prove

Have got 2 spare vac pumps so not a problem to try.
