So I am having a few issues with my '89 Defender's Clutch,
I depress the pedal and it springs down after replacing the master cylinder and the clutch still doesn't disengage, attempted to bleed the system but still no luck, any help would be greatly appreciated!

remove the pipe from the master place your thumb over the hole get someone to pree the pedal slowly whilst you lift your thumb a little dont let pedal up till holes sealed with your thumb again and repeat till fluid pumps out keeping res topped up as it only holds 3 pumps, refit pipe and bleed then from the nipple on the slave

Did you disconnect the pipes from the slave cylinder, at all, while changing your master cylinder?

I took the slave out & pushed the cylinder right back so all the air was out. Then get someone to slowly press as you hold the cylinder in with bleed screw open. Once fluid is there tighten up & feel the resistance of the cylinder. Once this moves all will be fine.
Re bolt back to bell housing
Don't forget bleed nipple at the top when refitting
