Im looking at getting some off road tyre and steel rims for my disco, its a 300tdi manual 5 door, the tyres i am looking for are 225/75R16's. My question is will these tyres effect the gearing ratios when i am off roading, will i notice or will it make any difference?

They are a pretty standard size so no issues.

I guess you have 205R16's just now?

Most go to 235.70R16 as their tyre of choice for a standard vehicle, the 225 are slightly narrower.

As far as I know, they are the same height,or near as,you are looking at a width thing - as mac says, the 225 is a narrower one, most that I know of are 235 or more.I certainly have always had 235 as the standard fit on all of mine,6 so far......
