I reside in Peru and drive most if the time off pavement mountain roads.
I own 2015 Def.110. 1. Which oils do you recommend for the front/rearaxles,transmission, transfer case? Does anyone use the same oil for all areas?
What do you use for the ball joints?
Has anyone had issues with ball joint fluidleaking? If so what is the recommended fluid to prevent leaking?

the approved oils
front axle swivels use oneshot grease stc3435 if its leaking it needs fixing ie play or corrosion on the ball

Check your axle breathers as well.
 
Front and rear diffs will be ok with a mineral EP90 GL4 or better. I currently use Comma SX75-90 semi synthetic in the diffs, this is GL5 and GL4. The gearbox is a "filled for life" which is deemed to be 200k Km (125k miles). Transfer box oil changes at 80k Km (50k miles). I half these mileages and change. Not reached the mileage for the gearbox yet, when I changed the transfer box oil I used Castrol Syntrax Universal Plus 75-90 fully synthetic oil. When I was searching for gearbox and transfer box oil Syntrax Plus ticked all the spec boxes for both items.

These attachments have the oil specs for the gearbox and transfer box. Bit of searching on the web will find you something suitable.

The front passenger side ball joint outside seal has leaked from the day I purchased it new, 2015. I have changed the seal and still leaks. I use the recommended One-shot fluid .

Hi James, Thank you for replying. I purchased the Defender 110 new in 2015. Have experienced the leak from the beginning. Have changed the seal and refilled the ball-joint housing with the oneshot recommended grease. Still no change. The leak is on the passenger side as if that makes a difference.

Not got any photo's I'm afraid, even worse, I'm not familiar with 2015 models.
However, it is likely that on top of (both) axle there will be a small hollow bolt with a spigot to one side to which a tube will be fitted. (It's not quite that simple, but you will see it if there is one fitted) This is to allow pressure in the axle to escape to atmosphere without allowing water to enter the axle case. Carefully undo the bolt and check that you can blow through the tube etc, if not then there is a blockage somewhere that will have to be cleared. I usually find a pipe-cleaner will do the job. Before putting it back together, either use a new copper washer, or use heat to anneal the original.
Edited to say - Listen to James - there is a problem there somewhere, perhaps the ball itself is distorted??

this is the rear breather but it looks the same on the front axle
