What model you got? On my 300tdi you just grasp the front of the seat and lift it up while pushing the backrest into the side of the car, it should collapse neatly then and you just need to fold the leg support down and bob's your uncle. If you've got a later model than mine though maybe you've got some kind of daft complicated system I can't help you with ;)

If its a D2 then grip the black bar at the rear of the seat and twist to unlock the seat and lift to the side. You can do it with one hand when you get the knack.

If it's a Disco II push the lever at the side of the seat to fold it in half, once its in half, on the innermost ( the side closest to the vehicle centre) there is a thin strap made of seat belt looking material but a lot thinner. Pull the strap and lift the seat up. The seat then lifts from the outside, ( closest to the side ) and folds away neatly. Easy peasy........

The Disco 2 3rd row seats are not obvious as to their folding, and I have to stop and think occasionally.

Picture below from the manual, couldn't see anything in the handbook.
