When the v8 runs water leaks out the coolant res cap. How much and how easy would a H-gasket be DIY once the head is skimmed??

It's not that bad a job, but it is an all-alloy engine, you have to be religious about using the correct torque procedures and settings, and use a composite gasket on the rebuild after a skim.

Get the valves done while the head is being skimmed, don't forget to renew the head bolts and valve stem seals.

Get a copy of RAVE for all the bits and pieces of info, like putting the rocker shaft and pedestals etc back the right way round so you don't block the oil feed....

When you fit the heads, and before you tighten them up, fit the lower manifold loosely with the old valley gasket and four bolts only, one at each corner gently nipped up. That aligns the heads to the manifold. Then you can tighten the heads knowing that you aren't going to have valley gasket leaks when you put it all back together.

Doesnt that hold the heads off from tightening down correctly?

Just asking as I may have to do it one day.

never had to do it that way either as the holes are larger to acomodate a small skim but really you need to skim the v8 heads in pairs
