When the problem occurs, one of the symptoms is the temp gauge rising to max temp very quickly and then dropping back down to cold, almost like its possessed. But yes only happens when on a decent run and engine is at optimum temp.

Just from what you put there I'd say it was an electrical problem.
 
I've had the same issues with mine since rescuing you on the plains.

I know for sure my ECU under the seat didn't get wet as hardly any water came in.

Will be getting the engine bay steam cleaned when I find some where local.

Interesting to hear that you have had similar problems, I am hoping now that I have given the rad and inter cooler a decent clean that the problem will be resolved. Although you didn't let water into your cab, under the seats where the ECU is and battery on the other side, there are drain holes which also allow water in. So whilst you may not have had water in the cab, water could have got to these parts and you wouldn't have necessarily noticed, I know this as my battery has a muddy tide mark on it.
