I have acquired a GPS Tracker which among other things accepts a pre formatted SMS, eg "STOP" from a mobile to enable an engine shut down.
The unit is supplied with a relay & a wiring harness.
To carry out the shut down would I be right in thinking that the relay would have to be connected the the vehicles existing fuel pump relay, to remove the power to it, essentially stopping the fuel pump from running & causing an engine stall?
Any advise appreciated

It sounds like an always on relay which is switched off by a signal from the tracker? If so then it needs to be wired inline to the fuel stop solenoid so that it supplies the only power to the stop solenoid.

am just pondering what state it'd be in if you stopped it whilst belting up the outside lane of the M6 during rush hour
OUCH!!!!
Inline on the wire to the starter solenoid might be safer. Won't stop it...but will prevent it being started again.

wire it to activate the crash sensor!!!!! shutdown and airbag to the face all at the same time! you wouldn't get your landy back in one piece but it would **** the scumbag that stole it right up!!!

specially if he had his Micky Ds super heated coffee in his hand at the time
