how difficult is it to change a head gasket

yep, do it. I had no 'spannering' experience, I'm clumsy and have a terrible attention span but even I managed it. I watched the trailerfitter videos, looked at the workshop manual, got the cheapest set of required tools and spent around 12 hours on it. My tip would be use new bolts and studs...

    power difference! but why????

Compare some stats with your mates 300tdi, compare compression test readings and run a boost gauge. Compare length of your fuel screws, and diaphram orientation on the FIPs. If no clues there, get your injectors tested and double check timing. Or just enjoy the slow lane.

Does this tow bar seem extraordinarily low?

Looks good for ploughing a field... I bought a defender that came with one of those, got rid of it straight off. If something needs towing, find some other mug to do it.. ruddy klingons.

    285x75x16 tyres

Had them on a standard height 90 with standard wheel offset. Turning circle was crap and extended bump stops needed to stop the rear wheels jamming up on the tub when articulated. Better with a lift and offset rims. If you are looking for height, 255/85 are the same as 285 but thinner so...

oil in turbo air intake (Defender 90 w' Disco TDI)

Wow quick to write off turbos and engines on here. Two egg cups is not that much if its been accumulating a while - the rocker cover attached breather/separator has a gauze in it that can get gunked causing oil to go into the intake instead of back down into the sump as designed. Flush it...

    What the fun?!?

seems to be missing some lights on the back, and no side repeaters? proper 16" rims with high wall tires and it wouldn't be quite so horrific.

running diff lock in snow, this ok?

Why on earth would you not have your c.diff locked at all times on snow?! You will have more control, there is zero risk of wind up on snow AND your center differential will suffer less wear when locked on slippery surfaces.

    Landrover 90 dogey steering

if its a sharp intermittent jerks to the right it sounds like something binding up. Loose UJs on mine just gave a steering dead zone so that you could rock the steering wheel between 10 and 1 oclock in time with the music and still be going straight. Right break disc warped maybe?

wow you lot don't half babble on :p If you skim the head you do not need to adjust gasket thickness. Only if you skim the deck. Get an elring gasket. You have FOUR choices 1, 2, 3 hole and then a NO HOLE gasket which is the thickest. So if you can't be bothered or do not have an accurate...
