Mine had a similar problem. It turned out to be the headlight connections (bullet connectors) under the bonnet slam panel. Clean these well and check the earths.

Had similar problems after changing the steering rods for HD ones. Used a very similar method to set the toe-in (the LR manual is pretty good at explaining/giving measurements for the rods/toe-in). Now it's on rails and no sudden veering off.

They're a Whitworth/BSF size - can't remember the exact spanner size, but the bolts are 3/8 in BSF. Have fun!

Thanks for the replies guys and gals. I just found the government site which states that my Landy requires a visual and an emissions check for CO2 and hydrocarbons at tickover when the engine is at normal operating temp. Gulp! Fingers crossed when it goes for the test :(
