I completely agree, the only reason I am aware of this is because I looked into it when I got my wheels and tyres (I wanted HD (wolf) wheels, but they are too small). In the end I gave up trying to find standard information and found the manufacturers recommendations. different manufactures have different guidelines for the same specification!
But they aren't standards, just one sites opinion. Many tyre makers also say wider tyres are fine for an 8" wide rim. But it also depends on the profile and the construction, often higher ply (or higher load rating) tyres of the same size might not be recommended for the same range of rim widths, even if they are the same size otherwise.So glad that standards are standard, unless you want to make it up as you go along...
Yes that will be fine. Most aftermarket rims can be had in different offsets, this will allow you to move the wheels a little more outbound for a wider track. This will change the stance a little and generally allow you to adjust the steering stops for more lock. Or you can go for something nearer to stock offset. Totally up to you.
