What does this EGR kit achieve?

Fitted EGR delete kit to my TD5 Defender, plus CAT removal pipe.
Was told it would "be better" but to be honest it feels the same.
However the MPG went up, l get an extra 20 miles from £60 of diesel.

That if it is so would be more down to the cat removal than the EGR removal.
 
I totally agree with Wammers on how a diesel works and the differences with how a MAF sensor contributes to the engine management system on a petrol engine and a diesel engine.
I have a good working knowledge of how each function but what I do not have is a detailed working knowledge of how the engine management system works.
With this in mind I am going to detail my question:-
My TD5 is an early model with the basic EGR control (this may be relevant to the answer) I have removed the EGR completely but retained the EGR solenoid blanking off the vacuum pipe's.
Just recently I have been experiencing when driving slowly e.g. first gear foot off throttle the revs would speed up then slow down not a drastic change but enough to make it difficult to negotiate an uneven road such as when driving off road.
I tried a number of things to cure the problem the last thing was to replace the MAF sensor with a new LR part (the one I removed was an LR part).
The result was my issue with slow driving had gone, plus other advantages like better starting (not that it was a poor starter but was better) and what feels like generally smoother driving.
Now my question Q What other functionality has the MAF sensor? because if it were only on the EGR system I should not have had any benefits at all as I have no EGR fitted

A faulty MAF can confuse the ECU simply because part of the circuit the ECU expects to see is missing or giving unexpected data.
