My dad's 4.6v8 P38 is working fine when all of a sudden in traffic temp gauge went into the red with no signs of overheating or coolant loss. It then went back to normal.

It had new piston rings in one cylinder as spark plug disintegrated and from repairs still burns oil a bit. Cannot imagine it is to do with that and LPG works fine.

Sounds like electrical issue.

Any advice please?

Yea could be that but coolant level stayed same had to top up about 2-3 cups.

I know some have an issue with sender not working
 
The fact it survived once you moved could mean viscous fan on it's way out. Lack of cooling at standstill when it should kick in. Think air con backup only kicks in by time it cooks. more likely than electrical but that's only my opinion. You can test by warming engine up and carefully putting a rolled up newspaper into the blades. It should not stop easily. If it does it's shot
 
When the viscous fan is working you can hear it they tend to roar and sound like a tank, just because the fan is turning does not mean it is working properly.
 
Viscous fan seems fine, run it the weekend didn't go into the red zone, did top coolant again but we burped the system. We need to keep an eye on it.

After the engine is switched off the fan runs on it's momentum then stops. when engine is off, fan is quite stiff?

The fact you needed to top up suggests air lock. It can be a sod to get all air out.

Viscous will be locked up when cold and roar on startup. As engine warms it will unlock and quite down. As temperature climbs it will start to lock and get louder again. At this stage you should not be able to stop it with a rolled up newspaper... Or your hand in the case of two-finger Pete.

It will remain stiff even when cold until engine is started, then with medium valve closed centrifugal force will return medium to storage. And the fan will be totally disengaged.
