TD4 Dancing Coolant Temp Gauge

My 2003 TD4 warms up wonderfully, drives for several miles with no issues, and then (intermittently, not always) the temp gauge drops to cold.

When the gauge drops beyond cold (resting at the bottom as if the engine were off), the fans come on at full power and RPMs increase slightly when idling.

I'm thinking it's a coolant temp sensor problem, as the needle quickly pegs back and forth between normal warm and dances around before coming back up to it's usual 1/2 way point. Sometimes it'll happen two or three times on a trip, sometimes it won't happen at all.

The coolant temp sensor has never gone above the half-way point and I've never smelled the engine heating beyond normal. Anyone else think I should replace the coolant temp sensor?
