Help.

Not sure what to do for the best with the inside of the roof. Started stripping it down & thought about painting it again.

Anybody got any recommendations?

goto somewhere like floors-2-go and buy a roll of their foil backed closedcell polyurethane underlay, for laminate floors and line the roof with that, no more condensation, a lot less noise it's thin enough to mold perfectly to all the contours of the roof and it looks fooking ace when it's done.
 
Either a good carpanel adhesive (slob has a link) or a good quality impact adhesive. don't go for dot and dab method but spread it across the whole of the panel and the foam, with a toothed adhesive spreader.
 
fook! the only glue to use is high temp contact glue, unless you want it to falloff on the first hot day. yer can get it in a spray can from Woolies Trim
make sure you ask for high temp glue or they'll give yer the normal stuff
