Also - I found an 'Overspeed Lamp' which lights up in RED that 120Km/H has been exceeded. Don't think that is enabled

Any warning is good Andy.
The same thing could be emulated by using a float switch in the expansion tank, wired in series with the engine temperature sensor. If it's configured to go open circuit when the coolant is below minimum, then the ECM would see a fault on the CTS, and put the fans on and send the gauge to high temperature warning.

Indeed. Will try the OE route first, bit autistic like that ! If it doesn't work will make a level switch.

It's actually ripped off Delphi software, which is connected to the port with a WOW box of tricks.

Yes, chinese software that, amongst other things, allows you to light up each Ipack lamp to test it.
Not sure if still available. Will try to find a link...
