Sounds like they have been badly bodged in the past - probably as Alibro says because the bolts were rusted.
As the car is obviously out of action while the brakes are dismantled, and you don't want to assemble and bleed just to have to do it all again, it might be worth seeing if you can get some backing plates from a breakers as it sounds like you may need to replace them. The only agro would be whether you need to remove the hub to change backing plates - I presume you are then into having to get the hub nuts off, new hub nuts, disturbing bearings, abs sensors/rings etc. Maybe others might know.
