Hello Pals.
Given that that the car is a 2003 model, and has probably never had a fluid change. I thought it would be a good idea to do one, or is it?
I can't find the service period for the fluid change. Or the best way to go about it. At a 120,000 mls. surly it's best practice to do a fluid change?
I really welcome any advice on this subject from this forum.

Yes it's worth doing. ;)

I changed the PS fluid on my FL1 SE a couple of years ago, and I plan on changing the PS fluid on FL2 next year, which will also need a pipe and reservoir change too.

On the FL1, it's easy. Just remove a hose from the oil cooler, and allow it to drain. It'll drain out of the pipe and cooler, unless you stick your thumb over the cooler so it drains out of just the pipe.
You won't get all the fluid out, but you'll get about 70%, which is enough for the system to be refreshed.
It then just needs refilling and bleeding, which is easy.
