Hi, just had the head skimmed and a new head gasket on td5 and there is still oil in water which within a matter of 30 miles dipstick goes from full to low level.

Any suggestions???

Assuming the face of the block is OK and the head gasket has sealed check oil cooler for internal leaks. The casting can crack which would leak coolant externally or the pressed steel heat exchanger can rust through if you dont run with the correct anti freeze and lets the oil enter the coolant. You wont see this unless you remove the cooler though.

No worries - at least you know what the problem is. When you fit a new one make sure that you have the correct anti freeze as it contains corrosion inhibiters. I'd also flush and change the engine oil just in case any water got into the sump.
