Need help with Freelander 1 1.8T weird overheating

Morning all, I’m Dan. Owned my Freelander 1 1.8 for a year while I struggled to go up hill, became frustrated so decided to dump in a 1.8T unit from a rover 75.

Problem:
While accelerating the temp needle suddenly jumps off the scale, when I decelerate the needle drops down to high but on the scale.

More relevant information:
Bottom hose is cold.
The PRT was on the previous engine which never had this problem.
The fans come on and cool effectively.
The temp sensor came of the original engine which worked fine before.
Coolant cap is the same as before.
Brand new rad fitted when I changed engine.
New pump fitted when engine was rebuilt with engine rebuild including N series gasket all the bells and whistles and skim.
Engine doesn’t overheat when idling only when driving, and I was never above 3k rpm as I’ve only just put the engine in.
Feed for turbo taken immediately after rad on bottom hose.
Return taken to ‘T’ piece between top hose, PRT, block. (This currently has the return pointing towards the block which I sense may be causing a weird turbulence so I will change, I can’t see it being the problem though).
Engine cools down in a matter of 2/3 minutes ready to drive without it overheating again for a while.
System has coolant coming out of both bleed points.

Any ideas are very welcome as I’m running out of ideas as to what could be wrong.
