You should earth to both the engine and the chassis however how you do this is up to you as long as all connections are clean, tight and made using the correctly sized cable.
You can run two earth leads from the battery earth terminal (one to chassis and one to engine/transmission) or you can run one between the battery & chassis and then from that point to the engine/transmission.

I personally have a good earth to the chassis and from there I have one to the transmission plus a link to the engine and another to the bulkhead earth point. I NEVER intend having earthing problems and doing it this way (plus providing decent earth cables for all accessories) means I don't have to rely on dubious earth paths through the body/chassis.
 
As Shifty and Litch suggest.

In addition all the earths behind the dash go into a central wire that is bolted into the bulkhead. The rear does a similar action.

Thats a good idea for the starter motor but remember the engine is more or less insulated from the chasis, rubber mounts on the engine gearbox and exhaust, even from the props down to the axles, and the axles have rubber bushes, not a good path. Always earth the chassis too.

I have earths from chassis to starter motor bolt, battery to gearbox and chassis.
