Due to a non starting issue I’ve decided to change my earth cables.

This earth is the battery to gearbox one, it has a attachment as shown in pictures, this was not connected to anything and seems to have been snapped off. Would this cause starter motor issues?

Possibly.
Mines non standard but the broken bit might just be a cable support to stop it sagging but could well be an earth point.
If you have/had a good earth going to the block or gearbox that would be ok for the starter but you can't have too many earth's remember that.
 
I’ll get another cable made up the same

I am replacing the starter motor so was thinking of also doing an earth direct from battery to the starter. What would be best point on starter to earth from?

One of the bolts that holds the starter motor to the flywheel housing, you also want an earth lead from battery to chassis.
 
During my refurb I have upgraded the Neg cable to 95mm squared hyperflex marine cable (18mm cable dia), fitted numerous body to chassis/ Engine and chassis to main Negs, also uprated the positive to starter motor (no sluggish turnover now)
 
It's usually a soldered connector incorporated in the main neg cable, bolted to the gearbox, unsure where the main chassis ground is

No.4 is the lead, you can see the connector in the middle of the cable that bolts to the gearbox

In this picture that cable 4 is the cable I’ve posted above, which the bracket broken off, the loop end was attached to gearbox. So your saying the broken part I have should go to gearbox? And the loop end to chassis?
 
Cheers for all replys guys. Just for reference for anyone else who comes along to this topic, I have now got the car starting no issues with the following earths:

-battery negative to chassis, daisy chained an earth lead from same chassis earth point to starter motor mount bolt.

-battery negative to gearbox bell housing

-rear of starter motor to engine block below inlet/turbo

-opposite side of engine to front of chassis near PAS
