Is there any way to disable TC when car is jacked up on axle stands ? Happy to pull fuses, etc. if anyone knows a way ?

No. Its an integral part of the ABS system, so will kick in whenever the wheels aren't turning at the correct speeds.
I suppose you could pull the ABS fuse, but it might upset something.

What about unplugging an abs wheel sensor? Can't work if it's not plugged in?

That's true, but it will put the ABS light on, which needs a code reader to turn it off again.

I have an i930 and Delphi CDP so not worried about clearing faults.

If you can clear codes, then disconnecting a couple of speed sensors will work.
