That is the plan, I did it on my 1.8i(VVC).

Not heard of that myself. The V6 was introduced on the 1A chassis, as were the larger front and rear brakes together with a larger master cylinder, with remote reservoir.
So in theory, everything should be as the A1 chassis spec dictates.
It is possible that the scrap yard has swapped to the earlier brakes, especially if it means not having to buy a set of tyres to make it roadworthy.

If the brake pads are well worn the caliper will have closed up and will clear the wheel. Been threads over the years on calipers catching after new pads fitted.

That's a possibility for the front. It won't help at the back though. The drums will still hit the wheel spokes

There's been threads about rear wheel studs snapping due to that
