2014 FL2. When I double lock sometimes I get a beep and sometimes I don't but either way the car locks and alarms itself so my question is, is the beep telling me that something's wrong or should it beep to tell me it's functioning correctly?

Is the sound coming from outside or inside?
You can do a bit of detective work by deliberately leaving something open, like the boot or bonnet, and see if there's a different sound or it's the same. On mine the horns sound a quick blast if I leave something open and try locking a door.

From under the bonnet I think. As you say, needs more investigation 👍

It may well be that the later FL2s (mine are early) uses the alarm sounder instead of the horns as a warning that something is open. However mine could use horns because the sounders have failed after 15 years.

The bonnet sensor is renowned for playing up, so lots of owners simply link the sensor out with a paperclip and some insulation tape.
