Not being funny, but you need to look up how AC systems work.

Do you ever regas your fridge/freezer? Or do you think the gas is somehow pumped in to the cabin to make it cooler?

Common leaks are the air con radiator or condenser to call it by its proper name. Next would be the seal on the compressor which leaks because you don't use the a/c enough and it drys up I believe. I am told if it's the compresser seal it can reseal its self after topping up as oil is put in with the gas lubricates it.

Nah, it won't kick in if it's too low.
Obvious thing to do to test is to turn temp down to minimum and see if it blows cold. (air con working) Then to max, if it blows hot then blend motors are working. My air con condenser has a leak so I've switched air con off (light on!) until I can find a good one. Perhaps I don't need to. Is there a cutout that stops the pump coming on if gas pressure is low?
