Apologies if this has been asked before, or if the answer is obvious - I've been looking online and in a couple of books (Lindsay Porter) for several weeks and not found the answer. So the quickest way is to ask you lot.

Under what circumstances, by what definition, do some Series 2/2A & 3 have razor edge bonnets and some rounded fronts?

The Two types are as you say razor edge and the rounded type is also known as delux type.Both can be with and without spare wheel holder.
You do tend to see more LWB's with round type especialy station waggon's but I do not think there was any hard and fast rule.
When the 3 came along you did tend to see more with the delux type,my SWB 2a is razor type,my SWB 3 a delux
 
So it was just an option when new? There's an 1974 S3 88 for sale near me, it has razor edge bonnet and headlights in the wings, it just looks wrong!

My S3 109 station wagon has the delux type with spare wheel mount but I bought a spare pair of wings and a razor edge bonnet came with them. The razor edge is a bit lighter but you are right, it looks wrong on the big S3. I think they look good on swb rag tops and ones that have been blinged up as fake off roaders.

Land Rover of old are well known for using up stuff in the parts bin from previous models .It may have been that they intended to fit all 3's with delux type but many series 3 came with a razor type,mostly SWB. Dunsfold could give you a clearer answer if that is what you need or just fit what you like.
 
As posted they were specified when ordered. My first landy was a LWB S2 and it had deluxe type but my next one, a 75 SWB had the razor type. My 83 late model SWB has a deluxe version. I agree that the razor type don't look good.
 
All the very late S3 models seem to have deluxe bonnets. I wonder if the very later ones had the deluxe as standard? I would imagine after a certain point (say late 70's) it was cheaper just to make one kind of bonnet?
