I am sure this has been covered already but I can't find it. Long story short, I need to drain the entire coolant system because my current coolant is Evian! (I kid you not! The hose connecting the engine to the heater matrix split on the way to Melbourne. Luckily it happened all of 100yds past a truck stop, we reversed into the stop and an Aussie trucker came to our aid with a slab of bottled water, we poured bottles of it into Daisy while running the engine, found the leak and cooled the engine before the head warped!) So, where can I find out how to drain ALL the coolant?

eh?

Evian - as in normal bottled water? Can't really see an issue, just pull the bottom rad hose like you would for any other coolant change. Refit once the water stops pouring out and refill with appropriate coolant.

fill the system to the top with distilled water, remove the drain plug, start the engine and let it idle untill no water is coming out, refit the plug fill it again with water and do the same then 3'rd time first poor 6 litres of concentrated OAT then top up with distilled water cos the system's capacity is 13l and max 9 will come out of it so with 6l of OAT the concentration will be close to 50%
