We are getting about 41mpg from ours. Wife driving mostly and pretty sedately at that.

I had a HSE and now a Sport, same 55 plate so can offer some insight. The HSE I didn't like, didn't like the way the suspension wasn't settled and seemed soft. The sport is better in that respect We don't go off-roading so aren't interested in that aspect but both have coped with the weather...

If you manage to pick one up for 8K you'll have done well. I've had to pay more than that for a 55 plate, but hopefully the full history and lowish miles will make it worth the premium. Good luck on your search
