I've cleaned both mating surfaces with brake cleaner and they are spotless now. I did not use acetone, just brake cleaner and scraped off the old gasket and sealant. I did take out the front plugs and replaced them with new ones (NGK). As far as the valves there isn't much I can do about...

THANK YOU for your good explanation and prompt response. I did manage to clean the old gasket material off the manifold and there is no pitting or warpage of the surface....in the original photo the #5 cyl was misfiring and maybe that's part of the problem of coolant showing on the old...
