265/75R16 is a stock sized tyre. It'll fit no probs.

When you talk rims and offset, it's a little more complex. A 7" wide rim with -30ET will stick out a different amount to an 8" rim with the same offset and different again to a 10" wide rim.

Personally I would buy the tyres/rims you want, fit and see if you need wider arches. Really big arches will just look daft if the tyres are inset too much. And many of the wider arch kits will require you to cut the wing and panels, as they are designed to make the opening bigger as well as wider coverage.

This site gives a nice visual representation. Just punch all the figures in for your current setup and your proposed new setup. And it'll tell you how much further they will stick out. You can then measure on your vehicle now and make an educated guess if they will remain inside the stock arches.
