Today the clutch felt soft, biting point at the floor and shifty gear changes. Had a look at the reservoir and its empty (with what looks like black oil in there) and there's fluid leaking down the back of the clutch peddle.

I assume this is a leaky master cylinder.

Is it worth changing both the master and slave at the same time?

Doesn't look too bad a job from he manual. Any pitfalls or **** ups I should avoid?

Replace both, they both do the same amount of work and share the same fluid. If ones gone the other may not be far behind.
Simple to replace just be careful of the piping. The connections on mine had seized which ended in the pipe twisting and snapping. I couldn't find anyone readily making them so made my own.

Also the slave cylinder on mine snapped at the casing where one of the securing bolts were. They are the biggest nightmares I've had.

Also as said remove the whole clutch pedal box it seems like more work but is so much quicker and easier. It's also good to grease the clutch pedal where it pivots, easier to press the pedal and gets rid of the famous squeak.

Don't bother with cheap replacements or you'll be at it again next year - been there. It's often possible to get away with a cylinder overhaul kit - the seals usually wear much faster than the bore.
