Little follow up from me as I started the thread I thought I should share my results.

Bit of Sound Deadening to reduce the reverb from the Van sides

Cut the 6mm ply for the sides, very easy to do then a bit of jigery pokery to notch the corners round the panels.

Wrapped with some Carpet using spray adhesive

Panels offered into place, drilled and held in with the fasteners

10mm Closed cell foam cut to size and fixed in place with spray contact adhesive

Cheap and easy enough to do, might do the tub when I get round to it, thats where the real difference would come from sound wise I imagine
