I have a 1997 v8 auto which has been exceptionally reliable until the last view weeks.

The car starts from cold without fail and as I said runs very well however occasionally when you switch the ignition off and try to restart it all you get is a clicking which appears to come from glove box area and starter motor. If you leave the vehicle for a while it will start no problem.

any thoughts would be appreciated.

Could be the start solenoid on the starter motor on its way out. OK when its cold, higher resistance when its hot. Same for any electrical component and I think the immobiliser is in behind the glove box. There may be a relay associated with it to feed the start solenoid.
