Currently restoring a RR classic vogue se soft dash and looked into putting in a galvanised chassis to make her last, but they seem a bit expensive. I have access to ss plate and a laser cutter at work and wondered how hard it would be to make one that would in theory never rust. Has anyone heard if this has been done before, and reasons why/why not and if it does work if it does work would anyone would be interested in buying them?

It'd be too expensive to buy probably also I would be a bit worried about Stainless habit of work hardening and cracking, as happens with exhausts. And it would not stay shiny for long! But they do exist after all wasn't the DMC DeLorean stainless? So maybe not such a bad idea!
