WELCOME! Landy bodies usually last quite well, it's the more important chassis which needs checking out 
Whereabouts is the rattle on down shift? Gearbox, front prop, rear prop? Does it do it in 2wd, 4wd, locked diff?
Loud hissing might be turbo piping leaking or maybe exhaust manifold (I have a TD5 Disco, but every turbo engine has pipes and an exhaust manifold )
I'm guessing a new set of locks to fix that dodgy lock problem
Have you had a read of the Defender section - some of the questions might have been answered already.
