I am on my first freelander and so far enjoying it. I have toyed with the idea of giving her a 3" lift to help when greenlaning with her bigger sisters. I have been told not to do this as it will ruin the handling and make her unstable on road. Has anyone done this? How easy is it and does it effect the handling? Can anyone help?

With a 3" lift you'll never get the camber on the fronts back to anything like normal, it'll handle like a pig, and you'll ruin your suspension and driveline

What would you suggest then. Would the best option be to find the largest rims possible and fit the largest all terrain/mud tyres I can get?

More like smallest wheels and biggest tyres, you can get 19's to fit, but the tyres are rubber bands

If you want AT/MT's you want small wheels, 15's or 16's, but 16's give you a wider choice of wider tyres, get some 16x7 modulars with 225/235 tyres

If you want a lift kit, I can supply a 40mm kit (if you order and wait a couple of weeks for the next batch to be finished anyway), see page 27 of this months LRO showing my kits, on my car with 225/75 AT's

But as said, there's plenty of threads on this, do a search on here or google, either way it'll bring LZ threads up, have a read through them
