Not the best of for eating quality.

Belgian Blue are huge double muscled things, and are mainly used as terminal sires for beef production in dairy herds. They are so huge they can give some conformation to the calf of even the most skeletal Holstein.
A lot of this meat will go for processing.
That is a senior stock bull, at least three years old, and might be a bit past prime eating quality, although still perfectly edible.

For really good beef yu want a smaller beast, Angus steer or heifer, Devon or Hereford are good too :)
