Solex & Stromberg carbs are very similar.

The rich/weak mixture is adjusted by the nut underneath.
There is a side-screw adjusting the throttle-stop.
The needle in the centre can be cahnged ofr moved up and down (a very small amount.
Solex have a free-floating piston and needle, strombergs have a sealed rubber diaphragm.
Both operate by vauum feedback - very elegant.
 
If you have a single choke weber 34ICH then you should be able to see it quite clearly on the edge of the carb facing the oil bath air filter side of the engine bay. The two adjustments you have on the carb are the tickover screw as you point out and a volume (or idle mixture) screw. Don't go fiddling with the volume screw! You'll easily distinguish the tickover screw as it is basically just a throttle stop which holds the throttle arm in a more open or closed state depending on how much you wind the screw in or out. Adjust it when the engine is hot with no choke on!

If you've gone and turned the volume screw by accident you'll need to set it up again as per the guides posted above. But if its stalling at junctions its probably just a case of re-setting the tickover, just make sure the engine doesn't sound like its racing and idling as low as you can go without it sounding like a bag of spanners. Without a tacho you'll never get it exact to factory spec or whatever.
