When do you fink the buildings were built?
As a result of your question I have done some digging.
It was fascinating to discover that the town/village has been destroyed and then built again several times.
https://www.ville-soreze.fr/lhistoire-de-soreze/
The whole place was built due to an Abbey being built first., in 754. The first village was built after the Normans destroyed the Abbey in the 9th century, so in the t10th cent. As the abbey was rebuilt.
In 1377, roving bands of mercenaries sacked the town, just leaving the monastery.
In 1573 during the wars of religion the Protestants destroyed the monastery and the church just leaving the bell tower shown in the pic.
In 1629 when Louis the 13th was dismantling the Protestant towns, very little was left of its ramparts and just two of the big gates.
But in the same year Louis XIII gave the Abbey to Dom Barthélémy Robin, and that kicked off the whole monastery/seminary thing which is what eventually made the place famous even beyond France for the quality of its teaching, its intellectual thought and its music. Today orchestras form all over the place go there to play and accompany the choirs of the seminary. This intellectual base is the reason why there ares till so many arty-farty types living there and they have cultural stuff going on all the time.
So to answer your question (!) I have no idea but I think the oldest ones prolly date back to the 16th century.
the fact the town's website is so huge is a tribute to its history.:):):):):)
