Connector size is generally suited to the hose size. A hose with 5/16" (8mm) internal diameter is best suited to an AN6 fitting. Which had a 9/16 thread diameter.

A 3/8" hose (10mm) will be suited to AN8 which is a 1/2" thread.

1/2" hose about AN10 etc but that rule of thumb isn't set in stone and the rules change as the hose size increases.

So the size of fitting would depend on the size of hose you want to use.

As an alternative, your local hydraulics place like Pirtek etc will have JIC fittings which are directly compatible with AN fittings but usually mild steel rather than aluminium. They should also have weldable/brazable fittings that would go straight onto steel tube so could put those straight onto the pump etc.
 
I recently replaced my fuel line with AN6 line on my P38 but that uses the bosch style quick connect fittings. So was reasonably easy to do.

If your pump uses the normal push on type with hose clamps you will have to do adaptors that go over to AN line but that kinda defeats the whole purpose of using AN lines. Unless you can have AN fittings brazed on like @Pug957 suggested, then it might be worth it. But then if you get a component failure, like if your fuel pump fails youll need to do the brazing of AN fittings all over again.
