To "chamfer" the ends of your brake shoes simple rub the ends with a file (or shave them with a stanley knife) so that they have a slight angle on them - you can also do the outside edges a little as well, but it's usually only the ends that need to be done.
Once you put the drums on and really stand on the pedal HARD a few times, you will probably find that the shoes will settle into position properly and any serious rubbing will disappear - remember the drum has to be tightened a little or it might be sitting askew. Very minor rubbing is normal for new shoes until they "bed in" with a little use.
If you can turn the drums fairly easily by hand then there isn't really anything serious to worry about. If the drums are locked solid or very very stiff , then check the adjusters are working freely as they often get gummed up with gunk and although the adjusting bolt might be fully withdrawn, the actuators might be stuck in their guides.
