Disappearring water!

I have got a T reg freelander 1.8 petrol, I had the cylinder head repaired approx 11 months ago. The temp gauge shows normal, The fans dont seem to be working, The water is boiling in header tank then disappears, Wos going on???:confused:
 
Coolant system could be loosing pressure, causing 'boiling/cavitation'
Could be hgf, then again a leaky cap, leak in a join, rad, heater matrix would all show same symptoms.
Fans dont come on until system is about 108 oC. With lack of pressure, temp would never reach this. pressure 0.9 - 1.2 bar
