Haynes should give you an idea as to colours of cables and what they do.
The defender parts catalogue can give some clues as to what things look like, see section 8 "body electrical".

The wise man takes loads of photos and labels everything.
A book will help, a workshop manual will show you components (and contains the wiring diagrams) and a parts book shows general drawings of how they fit together but for something like a bulkhead replacement (done three now) it really is a lot easier if you are methodical when at the strip down stage.
