The hardest thing about the conversion is welding a new exhaust section, everything else is quite straight forward, You will need to cut and reweld the radiator mounts for the new radiator, a new fuel filter (the returns are all different), a new clutch (its worth the replacement), take off all the electrics for the 200tdi and rewire the original N/A electrics (to hell with the glow plug timers, holding the key is fine). You might want a new temp sender (if the engine came out of a disco) to make the gauge work. All you need then is a couple of days and a large crain and bobs your uncle, even the mounts are the same...

Also (well on my 300tdi conversion) the oil cooler pipers were too short, so I had a couple of new ones made about 20 quid each. The power steering pipes were cut (metal ones) and refitted to the flexible pump pipes from the new engine(with the help of some jubilee clips), the throttle cable fits straight on as does the vac pump pipe and the fuel lines. The air filter is also a little problematic so if you can get the defender one that great, if not you can use one of those cone K&N type ones until you find one.

and boy, it makes a huge difference, well worth the money.

Also your transfer box will be 1 to 1.6 and the top speed won't be what you expected, so you will want to change that for a disco one (1.1.2) which makes everything prefect, twice as powerful and you can actually hear the radio when you drive over 30mph... great, if you want any more help.... let me know
