Bleeding brakes - how hard can it be?!

Showed the old truck some love this weekend...decent exhaust (admittedly not new, but very good condition), fixed that bit of wood to the right of the steering wheel, desperately needed new tyres and finally some new front brake calipers.

Changed the OSF front caliper in under 15 minutes, despite my brake hose clamps being next to useless and brake fuid dripping all over the drive. Went to bleed the brakes using a Gunson one man kit and an old trailer wheel as an air reservoir (only the front on that side). It went fine and the net result was a nice solid brake pedal.

Then I turned my attention to the NSF front, Changed the caliper, broke for 20 mins to sort the kids out (in retrospect letting loads of air in the system..?) and bled the brakes, but I cannot get a firm pedal. Even after putting 2.5 litres of new fluid through it, I still get tiny air bubbles. It's drivable as the brakes work, but the pedal is pretty spongy so there is obviously a fair bit of air in the system

Simple question...do I have to follow the book and bleed all 4 brakes in order?
