I am about to rebuild with 99% new parts a front axle for my defender. The year of the axle is 1988 so to my knowledge the swivel housing will be an oil filled one. what will i have to do to convert to one shot grease?

Is it as simple as ordering a swivel kit for a 300Tdi?

nothing, just fill with a sachet of one shot grease, sachets are pre-measured one sachet one swivel

My axles is an '89 and has the railko bush at the top rather than the taper bearing found in the later ones. When I rebuilt my swivels the rebuild kit came with one shot so I filled with that. Have been running like that for years now. As James has said you don't need to change anything just fill with grease rather than oil.
