I’ve been offered a 1988 127 Crash Ambulance atm it is LHD (as served in germany) and looking at possibly converting it to RHD to make it more useful has anyone experienced any problems doing this and the approx costs of doing this?? Currently only has 16,458 miles on and its the V8 petrol engine in it with manual choke

Cheaper to keep as a lefty ...

+1 Keep it lefty.
It's not the costing of the parts as it will be cheaper going from R to L but time & problems you will encounter as this will have many hidden behind dash.

It's the wiring that always makes it difficult... I've just spent 2 days removing heater unit from my 101 forward control LHD but manual gives procedure for rhd doesn't work ...pipes main wiring trunk all in the way because it's LHD...
